Join us for a very special beer dinner co-hosted by the lovely and talented Chef Sarah C. of Hottie Dawgs. The entire inspiration derives from bourbon, barrel aged beers, and rich, indulgent flavors. The beer is certain to be top-notch as well as our partnership with St Augustine Distillery is put on full display through Hyperion's use of their bourbon barrels.

FIRST COURSE — Bourbon Bacon Peach Pecan Salad
Smoked peaches and bourbon bacon over baby arugula, crispy fried shallots, crumbled gorgonzola, and toasted pecans drizzled with a bourbon vinaigrette

Peach Bourbon Blonde Beer — A beautifully subdued smoked peach blonde fluttering over a strapping bourbon note that is well rounded with a clean finish

SECOND COURSE — Chipotle Bourbon Pork Belly and Potatoes
Pork Belly roasted and glazed in a chipotle bourbon sauce served with bourbon mashed yukon gold potatoes

American Pale Ale — Columbus and Centennial hops deliver a deep complexity with earthy and piney notes complemented by Cascade hops driving this American Pale Ale home with a nice grapefruit undertone.

THIRD COURSE — Bourbon Braised Beef and Polenta Boneless beef short ribs braised in bourbon and served atop bleu cheese polenta with a bourbon balsamic reduction

Red Headed Bourbon- Red Headed bourbon has an immaculate red color that is followed by subtle roast malt character truly blended with St. Augustine's Bourbon Barrels sweet and vanilla characters.

FOURTH COURSE — Blackberry Bourbon Cobbler
Fresh blackberries and bourbon baked in a shortbread cobbler crust topped with vanilla bourbon ice cream

Vanilla Porter — Hyperion's first Vanilla Porter is a controlled Robust Porter with a nuance of chocolate with a light but sweet note of vanilla flavor

This will be a private event inside the taproom. A personal bartender will be assisting to answer any questions about the beer, ingredients, pairing and the chef will also speak to the food. This will be a intimate, educational, delicious and of course fun experience.
